4 salad tomatoes
Pine nuts 1/4 cup
250g of Mozzarella
Garlic 2 cloves
Parmigiano Reggiano 1/2 Cup
Basil 1 bunch
Extra Virgin Olive Oil
Add salt to taste
Pepper to taste
PREPARATION

Start by making the basil pesto. In a blender, combine fresh basil leaves, pine nuts, garlic, grated cheese, salt and pepper. Blend until smooth, gradually adding olive oil until the pesto reaches the desired consistency.
Slice the tomatoes and buffalo mozzarella thinly and arrange them on a serving platter in alternating layers. Drizzle with the fresh basil pesto, adding a generous amount over the tops of the tomato and mozzarella slices. Sprinkle with salt and pepper and fresh basil leaves for garnish.
