How did "cacio emigrante" come about?

The emigrant's caciocavallo is a cheese that was created in the post-war period to hide cured meats inside the caciocavallo and be able to take them overseas .


Origin


  • Emigrants going to America could not bring cured meats with them due to the health and hygiene laws of the time.

  • To avoid customs controls, they hid the cured meats inside the caciocavalli.


Characteristics


  • The emigrant's caciocavallo is a soppressata wrapped in caciocavallo cheese.
